Chapter 4
February is the month of love, and what better way to celebrate Valentine’s Day than with a sweet cake. Red Velvet is a classic Valentine’s Day cake, and while it may be a bit cliché, trust me, it’s a great way to celebrate this day. A nice twist is to bake the cake in a heart shape. The quickest way to the heart is through the stomach, so let’s start preparing.
You will need:
250g of plain flour
300g powdered sugar
125g butter
2 eggs
10g cocoa
Salt
1 tsp vanilla sugar or vanilla extract
250 ml kefir (it’s a kind of sour milk, if you can’t find it, you can use sour cream)
1 tbsp vinegar
1 tsp baking soda
Red food coloring
Cream:
500g mascarpone
100g powdered sugar
1 tsp vanilla sugar or vanilla extract
Decoration:
250g mascarpone
50g powdered sugar
100g butter
Instructions:
- Preheat the oven to 170°C/388°F.
- Mix the flour, ccocoa,and salt together. PPut itaside for now. Beat the sugar and butter until frothy in a different bowl. Add the eggs and beat them in.
- Add the food coloring to the kefir (or sour cream) and add it to the sugar, butter, and egg mixture. NNext,add the flour, ccocoa,and salt itothe mixture.
- Mix the baking soda into the vinegar and quickly pour it into the rest of the mixture. Pour the mixture into your prepared baking pan and bake for 30 minutes.
- Cream: Mix the mascarpone with the sugar, vanilla sugar, and extract. Add the very cold whipping cream and mix. If the cream isn’t cold, it won’t turn out well.
- Decoration: Mix the sugar, mascarpone, and butter together.
- When the cake is ready to be cut, divide it into at least three parts. Add the cream and stack up your cake. If you like, you can add some kind of jam for it to be fruitier and less dry. Decorate it to your liking; it’s your cake, go crazy.
- Enjoy and have a nice Valentine’s Day, although you can eat this whenever, not just Valentine’s Day. ☺♥
